No soy la primera en decir que este blog crece día a día gracias a vosotros, a todos vosotros.
Unos os dejáis ver, comentáis y mantenemos una relación virtual, otros sois como pequeñas hadas que no se muestran pero que dejan su magia en cada entrada y otros me envían emails para comentarme algún tema con referencia a alguna receta, al blog o simplemente para saludar.

Sin vosotros, este blog no sería lo que es.

Hace un tiempo recibí un email de esos que te dejan con la boca abierta y hace que estés durante todo el día con una sonrisa de tonta en la cara.
Era de Julio, un «premianenc» que ahora vive en Sevilla y que se ponía en contacto conmigo para felicitarme por el blog, aunque como dice él: «no todo va a ser bueno, hay alguna receta que no me gusta, pero otras, están muy bien». Peloteo el justo, así me gusta!!

Bien, pues después de cruzarnos algunos mails, me preguntó si tenía la receta de la mermelada de alcachofa, ya que la había probado en un restaurante y no la había vuelto a encontrar. Le contesté que no la tenía pero que indagaría y me informaría sobre ella. Así que después de mirar, buscar, preguntar a un amigo chef y de probar alguna versión, aquí está. Dedicada a ti, Julio.

Tengo que reconocer que no tenía ni idea de lo que saldría y si realmente el sabor sería rico. Ahora tengo que decir que sí. Es una mermelada buena, con un sabor especial y que combina a la perfección con queso, como en la foto, y con carnes. Para que os hagáis una idea, tendría una aplicación similar a la mermelada de cebolla.
Lo único que hay que tener en cuenta es utilizar únicamente los corazones tiernos de la alcachofa para que no haya pelitos y quede una mermelada suave.

Disfrutad de la semana!

Ingredientes (para un potecito como el de la foto):
– 3 alcachofas frescas
– 200 ml agua
– 75 gr de azúcar moreno (también se puede utilizar blanco)
– Ramillete de perejil

Elaboración:
Limpiar las alcachofas quitando solamente algunas de las hojas duras. No limpiar dejando los corazones únicamente ya que las pondremos a hervir y después las acabaremos de limpiar.
Poner una olla a hervir con abundante agua. Cuando rompa a hervir, echar el perejil y las alcachofas.
Cocer durante 20 min o hasta que las alcachofas estén tiernas.
Dejar templar y acabar de limpiar dejando los corazones bien limpios. Cortar las alcachofas a dados y
ponerlas en un cazo con el agua y el azúcar. Dejar cocinar a fuego suave hasta que se haya evaporado el agua por completo.
Si se quiere conservar en un bote al vacío, meter la mermelada todavía caliente en el frasco esterilizado y tapar.

  8. Me gusta mucho la alcachofa y en todas sus formas! En el blog tengo varias entradas dedicadas a estas maravillas, y es que están riquísimas! Nunca las he probado en forma de mermelada, pero tiene muy pero que muy buena pinta, así que me lo anoto, y se tendrá que probar! 🙂

    No se si me animaría a hacerla por eso de que no me guste y la tenga que tirar, cosa que me duele profundamente. Que no le gustará a mi familia es casi algo que puedo confirmar porque no les gustan las alcachofas, pero a mi…no se…puede que si. Las alcachofas me pirrian pero en dulce no me las imagino.

    Si te hago un poco de peloteo, el justo, como Julio…me envías un botecito?

    Impresionante novedad en la cocina! No he oído hablar de la mermelada de alcachofa (ni de cebolla, he de reconocer) en la vida, pero estoy segura de que esta entrada no sólo va a aprovecharla Julio, sino todos los demás. Yo me apunto, porque con carnes blancas debe maridar estupendamente (siempre y cuando me salga bien, claro está).

    • The new Zune browser is surprisingly good, but not as good as the iPod’s. It works well, but isn’t as fast as Safari, and has a clunkier interface. If you occasionally plan on using the web browser that’s not an issue, but if you’re planning to browse the web alot from your PMP then the iPod’s larger screen and better browser may be important.
